Meet our Executive Chef

A graduate of the George Brown Culinary school and Le Cordon Bleu College of Culinary Arts, RBC Convention Centre Executive Chef Patrick Truax started his culinary career working in predominately classic French style restaurants in Ottawa and Toronto and later moved to the Distillery District in downtown Toronto.  His restaurant path brought him to cook in Restaurant Daniel, a three Michelin star awarded establishment in New York City.  

Learning from top talent in the industry and with years of experience as an executive chef, Truax moved on to become executive chef at the Hamilton Golf and Country Club and then executive chef at Levy Restaurants; home to the Hamilton Tiger-Cats and Ottawa Red Blacks.  As supporting chef for major league events including the Stanley Cup, college basketball, PGA and MLB World Series, Truax has been catering to large events for many years. 

Still in the ‘main course’ of his career, Truax has made Winnipeg his new home and is enjoying working with the team at the RBC Convention Centre.   

“There is an extremely talented culinary team and I’m excited to work closely with each of them to expand our food and beverage program,” said Truax. “From national conventions, gala dinners or consumer shows, our team is working to exceed all guest expectations.”

The Centre has recently adopted an ‘evolution’ outlook for their food and beverage program which looks to incorporate new food and beverage trends and more importantly local products and providers.  Truax is working with the menu and team to build and add to the strengths of the Centre’s offerings to ensure a localized experience where possible.  

In one day, the team could be plating a five-course dinner with wine pairings while simultaneously providing innovative concession options for the hungry consumer show audience.  Truax’s diverse experience is crucial in the many facets required to orchestrate the continued culinary growth of the Centre. 

Our culinary team is in great hands under the leadership of Chef Patrick. With his talent, passion and fresh approach, we’re confident that guests will love what he brings to the table.
